The Dolphin bistro menu focuses on fresh, seasonal produce under the direction of Head Chef Kristy Shipp. Kristy's vast experience in creating hotel bistro cuisine, ensures her kitchen is producing some of the finest casual cooking available in Sydney. Her philosophy is to combine the best quality ingredients with recipes that are fresh and uncomplicated. The resulting menu features both the classic and contemporary in delicious hotel dining. Our open seating format means patrons can enjoy a quick business lunch, late afternoon graze, or comfortable evening meal in a stylish and relaxed setting.
